I have made this easy recipe for Chipotle Pomegranate Barbecue Sauce more times than I can count. I’ve had it with many dishes including ribs, chicken, shrimp, pulled pork, brisket, burgers, grilled vegetables. It’s fantastic in so many ways. Completing the just the first step also doubles as a pomegranate molasses recipe.

Pomegranate Chipotle BBQ Sauce Ingredient Notes

  • 100% Pomegranate juice – Use store bought or homemade pomegranate juice to make this drink. POM Wonderful is usually the easiest to find in the produce section or organic or natural foods aisle of a grocery store.
  • Chipotle peppers – Look for these canned or jarred varieties in the international or canned vegetable aisle of the supermarket. Dried whole chipotle peppers may also be found in the produce section.

How to Make Pomegranate Chipotle Barbecue Sauce

  1. Combine pomegranate juice, lemon juice and sugar in a saucepan over medium-high heat. Bring to a boil, reduce heat and keep at a very strong simmer, stirring occasionally, until the mixture reduces to a syrup consistency that coats your spoon.
  2. Add the rest of the ingredients to saucepan, bring back to a boil then reduce heat and simmer until mixture thickens to a bbq sauce consistency.

Note: By completing only the first step you’ll have pomegranate molasses which can be used in many different recipes, dips, marinades, salad dressing, desserts or drinks.

Adjust the Spiciness – If you’re concerned about too much spice for any little ones or non-spice lovers you have around, you can try dividing it into two saucepans, adding less chipotle to one and more to the other. I’ve done it that way countless times, it’s simple and I love being able to give everyone a choice.

How to Use on Ribs – I usually add a dry rub to my ribs first but you can skip that and just use the Pomegranate Chipotle Barbecue Sauce; it still adds a lot of flavor. Just be sure to baste your ribs about 30 minutes before they’re done and serve plenty at the table. This recipe makes plenty for two4-pound rack of St. Louis style ribs, including enough to add extra at the table (which we all know is a necessity)!

Ways to Use Pomegranate Sauce

  1. Glaze for Meat: Lather the sauce onto grilled or roasted meats such as ribs, chicken, lamb or shrimp.
  2. Marinade: Use as a marinade with shrimp, tofu, or salmon.
  3. Dip: Use the sauce as a dipping sauce for appetizers like chicken wings or skewers, or vegetable sticks, or crispy tofu bites.
  4. Salad Dressing: Combine with olive oil, vinegar and herbs and drizzle it over a salad.
  5. Sandwich or Burger Spread: Apply as a spread on sandwich bread or hamburger buns.
  6. Roasted Vegetables: Toss on roasted vegetables like asparagus, Brussels sprouts, or carrots.
  7. Pizza Sauce Alternative: Substitute traditional tomato sauce with this sauce. BBQ Chicken pizza would be ideal.

Makes about 3 cups sauce.

Ingredients

  • 2 cups 100% pomegranate juice, I always use POM Wonderful
  • 1/4 fresh lemon juice
  • 1/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup chipotle peppers, chopped very fine
  • 1 15 ounce can tomato sauce
  • 1 tablespoon yellow mustard
  • 1 cup light brown sugar
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions

  1. Combine pomegranate juice, lemon juice and sugar in a saucepan over medium-high heat. Bring to a boil, reduce heat and keep at a very strong simmer, stirring occasionally, until the mixture reduces to a syrup consistency that coats your spoon. This can take about an hour.
  2. Add the rest of the ingredients to saucepan, bring back to a boil then reduce heat and simmer until mixture thickens to a bbq sauce consistency.
